Fiesta Chicken Burrito Bowl — FULL RECIPE

Alright, Squad — time for something fun!
Here’s a simple way to level up your next meal using Pepper Breath:
Fiesta Chicken Burrito Bowl
(Turn your kitchen into a taqueria!)

What you need:
For the chicken:
▶ 3 tablespoons lime juice
▶ 2 tablespoons olive oil
▶ 1 tablespoon cumin
▶ 1 ½ teaspoons garlic powder
▶ 1 ½ teaspoons onion powder
▶ 1 ½ teaspoons ground white pepper
▶ 1 teaspoon smoked paprika (normal is fine, too)
▶ 1 teaspoon chili powder
▶ ¾ teaspoon salt
▶ ½ teaspoon MSG (optional, but recommended)
▶ 1 ½ pounds boneless chicken thighs
For the cilantro-lime rice:
▶ 1 cup long-grain white rice (rinsed)
▶ 1 ½ cups water
▶ ¼ teaspoon salt (plus more to taste)
▶ 1 lime (zested plus 2 tbsp fresh lime juice)
▶ ¼ cup cilantro(chopped)
To assemble:
▶ Romaine lettuce (chopped)
▶ Pico de gallo
▶ Sweet corn (rinsed and drained)
▶ Black beans (rinsed and drained)
▶ Guacamole or diced avocado
▶ Sour cream
▶ Whatever else your little heart desires as a topping
Instructions:
1. To make the chicken, stir together 2 tablespoons of oil, lime juice,
chopped chilies, Pepper Breath, and spices in a large bowl. Add chicken
and toss to coat. Cover and let sit in the refrigerator for at least 2 hours or
up to overnight.
2. Preheat your oven to 425 degrees. Place the chicken thighs on a lined and
greased baking sheet.
Bake the chicken for 20-25 minutes or until the chicken is fully cooked through (165°F internal), putting the oven to broil for the last 6-7 minutes of cooking.
Remove the chicken from the pan and set aside for about 5-10 minutes to rest

3. To make the rice, add salt and rice to a pot of boiling water. Return to a
boil, then reduce heat, cover, and simmer until water is absorbed and rice
is tender, 15-18 minutes. (Alternatively, you can use a rice cooker.
This is the preferred method.)

4. To assemble, arrange rice and lettuce in the bottom of a serving bowl and
top with the chicken, diced tomatoes, guacamole or diced avocados, corn,
black beans, red onions, and more Pepper Breath (duh).

Use pre-packed chicken (rotisserie, grilled strips, or even frozen fajita chicken)
tossed with some Pepper Breath and microwave ready cilantro lime rice, prepare
according to instructions on package, and assemble.
